Ingredients for Soufflé Pancakes:
-Coconut milk/dairy or non-dairy milk: 80ml
-Egg yolks: 80ml
-Egg whites: 120ml
-Castor sugar/ coconut sugar: 80gm
-All-purpose flour: 80gm
-Baking soda: 2gm
-Honey: 1 tbsp
-Vanilla or any other spice: 1/2 tsp
-Lemon zest: of 1-2 lemons
-Fresh seasonal fruits
-Icing or powdered sugar
-In a mixer grinder add the egg yolks, milk, flour, baking soda, spice & blend well.
-Make a French meringue by whipping the egg whites & sugar till you get soft peaks.
-Pour the flour mix into the meringue and fold to make a batter.
-Heat a flat Teflon pan (like a crepe or Dosa pan) over medium flame and add a ladle of pancake batter on it.
-Cook till brown on both sides.
-To plate: Sift icing sugar on pancakes, drizzle with honey/ maple syrup & garnish with fresh seasonal fruits.
