Orange Cointreau Truffle

Ingredients for Orange Cointreau truffle:

-Cream: 190 g
-65% Dark chocolate: 250 g
-Butter: 75 g
-Honey: 30 g
-Cointreau: 60 g
-Zest: from 2 oranges


-Heat the cream and honey in a saucepan till it reaches 60 deg C.
-Pour it over the dark chocolate and whisk till it forms a ganache.
-Add Cointreau and butter when the ganache reaches 35 deg C.
-Blend with a hand blender.
-Take a 10 number nozzle and pipe the ganache on a silicon mat. Refrigerate for 2 hours.
-Remove from the refrigerator and roll the ganache in dark chocolate or cocoa powder and sprinkle condiments (if any).
