Ginger Bread Cookie

Gingerbread Cookies

All purpose flour - 220 gm
Milk- 30 gm
Baking soda - 2 gm
Muscovado sugar - 100 gm
Brown sugar- 75 gm
Butter - 75 gm
vanilla extract - 1 tsp
Ginger spice mix- 1 tsp
Fresh Ginger zest - 1 tbsp
Zest of 1 lemon
A pinch of salt

Ginger spice mix

Cinnamon powder - 2 tsp
Ginger powder- 3 tsp
Cardamom powder- 1/2 tsp
Cloves powder- 1/4 tsp
Nutmeg powder - 1/4 tsp


  1. Cream room temperature butter and sugar together. Add flour, baking soda, spices, vanilla extract, and zest, knead into a crumble dough. Add milk and finally knead into a smooth dough.
  2. Roll it flat between two baking sheets or parchment paper around 3-4 mm thick. Freeze the sheeted dough for 30 mins.
  3. Cut with Christmas shape cookie cutters and place them on baking tray to bake
  4. @160C for 15-18mins. Bake until golden brown and semi- hard.
  5. Cool down the cookies on wire rack
  6. Garnish with fondant or royal being and serve.
