Fettuccine Pasta

Pasta Dough:

Ingredients for Pasta dough:

-Flour: 100 g
-Egg yolk: 1 nos
(Vegetarians can substitute the yolk with hot water: as required)

Method:

Take the flour in a bowl. Add the egg yolk and mix to form a dough (Add some water if the dough seems too stiff). Cling wrap & let it rest for 30 mins. Roll the dough through the pasta machine till it reaches the thickness of 0.5 mm. Roll it through the Fettuccine cutter and let it dry for 30 mins.



Pasta Sauce:

Ingredients for Pasta sauce:

-Onion (chopped): 5 g
-Garlic (chopped): 4 g
-Cream: 20 g
-Parmesan(grated): 20 g
-Pasta water: 15 ml
-Pepper: 2 g
-Oil: 5 g
-Butter: 15 g
-Fettuccine: 100 g
-Salt: to taste

Method:

Boil the fettuccine in salted water till al dente. Strain & keep aside. Reserve 15 ml of the pasta water. In a pasta pan, heat the oil. Add the onion & garlic & cook till translucent. Add in the pasta water, butter & grated parmesan. Let it boil for a minute. Add in the cream & season the sauce with salt & pepper as required. Add the boiled fettuccine & toss. Plate the pasta & serve hot with a slice of toasted baguette.
