Carrot Cake
Ingredients for Carrot Cake:
-Vegetable oil: 130 g
-All purpose flour: 120 g
-Soda Bicarbonate: 4g
-Castor or cane Sugar: 170 g
-Eggs: 85 g
-Salt: 1 g
-Ground Cinnamon: 4 g
-Grated Carrots: 158 g
-Chopped Walnuts: 40 g
Method:
-In a large round bottom bowl, mix all the dry ingredients with the eggs and whisk for 5 mins.
-Grate the carrots and chop the nuts and add them into the mix. Transfer to an 8 inch round cake ring.
-Bake at 160°C for 45 mins or till cooked.
-Allow it to cool for 10 mins in the tin before removing and placing it on a cool rack.
-Garnish the cake with marzipan & orange marmalade!
